Beef or chicken fajitas

Ingredients

Meat

  • 1 1/2 lb chicken flank steak or round steak

Marinade

  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 1/2 cup tequila optional
  • 3 Tbsp vinegar
  • 2 cloves garlic
  • 1/2 tsp garlic powder
  • 1 tsp dry mustard
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp crushed red pepper

Filling

  • med green pepper
  • med onion
  • med tomato
  • 12 9" tortillas
  • 12 whole green onions

Instructions

Marinate the meat

  • Trim & slice meat into thin strips. Stir together the marinade ingredients. Place meat and marinade into a Ziploc bag and seal. Marinate in refrigerator at lease 4 hours or overnight, turning 3-4 times.

Cook the meat

  • Remove meat from marinade, reserve liquid. Grill meat to desired doneness, brushing with marinade a couple times.

Prep the veggies

  • Saute peppers & onion in 4T marinade for 3-5 minutes until crisp & tender. Dip whole green onions in marinade and lightly grill. Add tomato to pepper and onion at last minute to warm.

    This was yums! I didn’t put tequila into the marinade.
