Chicken Souvlaki with Grilled Pita

Chicken Souvlaki with Grilled Pita
Servings: 6 servings

Ingredients
Souvlaki marinade
- 1/4 cup olive oil
- 3 Tbsp fresh lemon juice
- 1/2 Tbsp salt
- 1/2 tsp pepper
- 1 tsp oregano
- 1 bay leaf
- 2 cloves garlic
Meat
- 2 1/2 pounds boneless chicken breast or pork tenderloin, sliced into 1" pieces
Assemble
- 2 medium tomatoes, chopped
- 1 large onion chopped
- 6 pitas
- tzatziki sauce
Instructions
Marinate the chicken
- In large bowl whisk together all the souvlaki ingredients, except the chicken. Add the chicken and toss to coat. Cover and let marinate for at least 30 minutes or up to overnight in the refrigerator.
Grill the meat
- Put chicken on skewers and grill over medium heat until done
Assembly
- Put a grilled pita onto a plate, top with some cooked chicken, tomato, onion and some tzatziki sauce. Repeat with remaining ingredients and arrange on a serving platter.
Notes
I buy tzatziki sauce from Costco already made. There are recipes to make some homemade.
