Ingredients

  • 6 large eggs
  • 1 cup small curd cottage cheese
  • 1/4 cup milk
  • 1/4 cup pepper jack cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 medium onion chopped (optional)
  • 1 cup bacon (cooked) ham or sausage (optional)
  • 1 cup spinach chopped (optional)

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9x9 inch baking dish.
  • In a large bowl, whisk together eggs, cottage cheese, milk, cheddar cheese, salt, and pepper.
  • Stir in any optional add-ins.
  • Pour the egg mixture into the prepared baking dish or individual muffin tins (sprayed with cooking spray to avoid sticking)
  • Bake for 25-30 minutes, or until the eggs are set.
  • Let cool for a few minutes before serving.
