Beef or chicken fajitas

Ingredients
Meat
- 1 1/2 lb chicken flank steak or round steak
Marinade
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 1/2 cup tequila optional
- 3 Tbsp vinegar
- 2 cloves garlic
- 1/2 tsp garlic powder
- 1 tsp dry mustard
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp crushed red pepper
Filling
- med green pepper
- med onion
- med tomato
- 12 9" tortillas
- 12 whole green onions
Instructions
Marinate the meat
- Trim & slice meat into thin strips. Stir together the marinade ingredients. Place meat and marinade into a Ziploc bag and seal. Marinate in refrigerator at lease 4 hours or overnight, turning 3-4 times.
Cook the meat
- Remove meat from marinade, reserve liquid. Grill meat to desired doneness, brushing with marinade a couple times.
Prep the veggies
- Saute peppers & onion in 4T marinade for 3-5 minutes until crisp & tender. Dip whole green onions in marinade and lightly grill. Add tomato to pepper and onion at last minute to warm.
