Buckwheat Pancakes

Buckwheat Pancakes

Ingredients
- 3/4 c white flour
- 3/4 c whole wheat flour
- 1/4 c wheat germ
- 1/4 c ground flax seed
- 2 eggs
- 1 t baking soda
- 1 t salt
- 2 t baking powder
- 2 T sugar
- 4 T vegetable oil
- 3 c buttermilk
Instructions
- In a large bowl, sift together the flours, baking powder, baking soda, ground flax, salt and sugar. Make a well in the center and pour in the buttermilk, eggs and vegetable oil; mix until smooth.
- Heat a lightly buttered griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
Notes
Add an extra 1/2 to 1 cup of buttermilk for added flavor!
