Mandarin Salad

Ingredients
Salad
- 1/2 c almonds sliced
- 3 Tbsp sugar
- 1/2 head iceberg lettuce
- 1/2 head romaine lettuce
- 1 c celery chopped
- 2 green onions chopped / Red onion is also a good option
- 11 oz mandarin oranges drained
Dressing
- 1/2 tsp salt
- pepper dash
- 1/4 C vegetable oil
- 1 Tbsp parsley chopped
- 2 Tbsp sugar
- 2 Tbsp vinegar
- Tabasco sauce dash
Instructions
- In small pan over medium heat, cook almonds and sugar, stirring constantly until almonds are coated and sugar dissolved. Watch carefully as they will burn easily. Transfer to baking sheet lined with parchment paper. Cool and store in airtight container.
- Mix all dressing ingredients and chill.
- Mix lettuces, celery and onions. Just before serving add almonds and oranges. Toss with the dressing
