Pasta and Sausage in Garlic Wine Sauce

Ingredients

  • 1 pound pasta tubes can use any type of pasta
  • 1 pound Jimmy Dean Hot Sausage
  • 1 head broccoli ends trimmed and sliced or asparagus
  • 1 pound grape tomatoes sliced in half
  • 16 ounces baby spinach
  • ½ cup dry white wine or vermouth
  • ½ cup chicken broth or bone broth
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon garlic minced
  • 1 tablespoon Italian seasoning
  • 2 tablespoons Freshly grated Parmesan cheese
  • 1 pinch salt and pepper

Instructions

  • Cook pasta according to instructions.
  • Place chopped garlic and olive oil in pan and let simmer for 1-2 minutes and low-medium heat. Add chopped broccoli or asparagus and tomatoes. Sautee for a few minutes until they get tender. Add baby spinach and sautee a few more minutes until spinach is soft. Sprinkle with italian seasonings and stir until blended.
  • Add wine and chicken stock, stir and lower heat. Let simmer for a few minutes.
  • While veggies are simmering, cook sausage until it’s no longer pink.
  • When pasta is done, remove from heat, drain and add to veggie mixture. Stir and remain on low heat. Add sausage and stir until well blended. Sprinkle parmesan on top.
