Rhubarb Bread

Rhubarb Bread
Makes 2 loaves
Servings: 16 Servings

Ingredients
Bread
- 1 1/4 cup brown sugar
- 1/2 cup vegetable oil
- 1 large egg
- 1 cup buttermily
- 1/2 tsp salt
- 1 tsp baking soda
- 2 tsp vanilla
- 2 1/2 cup flour
- 1 tsp baking powder
- 1 1/2 cup rhubarb diced
Topping
- 1/2 cup sugar
- 1 Tbsp butter
- 1/2 tsp cinnamon
Instructions
Bread
- Combine sugar & vegetable oil. Add egg, buttermilk & vanilla. Beat well.
- Stir together dry ingredients then stir into sugar mixture. Fold in rhubarb. Pour into 2 greased & floured loaf pans; filling about 2/3 full.
Topping
- Combine sugar, softened butter and cinnamon. Sprinkle on top of bread then bake for 40 minutes @ 325°.
Notes
You can either make loaves or muffins! Be sure to spray the muffin cup with nonstick spray for easy paper removal! I would bake for about 20 minutes and check to ensure toothpick is clean before removing from oven.
