Roger’s Chili – Old Recipe

Roger's Chili
Servings: 8 servings
Ingredients
- 2 Tbsp vegetable oil
- 2 lb beef stew cubed
- 1 cup onion
- 1 whole green pepper
- 1 12oz can tomato paste
- 2.5 cup water
- 1 whole jalepeno
- 1.5 Tbsp chili powder
- 1.5 tsp crushed red pepper
- 1/2 tsp salt
- 1/2 tsp oregano
- 1/2 tsp cumin
- 1 15oz can pinto beans
- co-jack cheese
Instructions
- Sauté onion and beef stew in pan. Transfer to crock pot. Add remaining ingredients except pinto beans.
- Cook on high for 6 hours or medium for at least 8 hours. Add pinto beans about 15 minutes prior to serving
- Top with cheese. Serve
Notes
This recipe is versatile! I modify and use 1 bottle of beer + 1 cup of water (instead of 2.5 c water).
Other additions include: 1 can black beans or top with cilantro
