Tomato, Corn, Black bean salsa with cilantro

This recipe is not picky at all but flavorful tomatoes is a must! Use your judgment with the ingredients – it won’t hurt to add more tomatoes, peppers, corn, jalapeno. Use what you like! Tweak the taste by adding salt if needed. Add vinegar if the tomatoes don’t have much flavor.
*Add guacamole if you like!
Tomato, Corn, Black bean salsa with cilantro

Ingredients
- 2 cups tomatoes chopped
- 1 jalapeno pepper diced - I include seeds!
- 1 can black beans drained & rinsed
- 1 cup roasted corn frozen
- 1 small red onion finely chopped
- 1/2 cup peppers red, green, yellow - whatever is on hand
- 1/4 cup lime juice
- 1 tsp garlic minced
- 1 tsp Extra-virgin olive oil
- 1 bunch cilantro chopped fresh
Instructions
- Mix all ingredients together and serve!
